The wine spends 3 weeks on the skins with regular hand submerging of the cap*

After a week a used 500 litre oak barrel was filled with the juice to complete fermentation and the balance was reserved for topping up

The soils are rich in sulphur with generous clay and chalk in the topsoils

starting with the Sangiovese in mid-September

and has 2 very distinct soils and a wavering hillside
