He is quickly becoming one of our favorites around here at PERC. Edinson produces exceptional coffee at his farm, Quebraditas Coffee Farms. The process begins with harvesting the ripest cherries and floating them to remove any undesirables. The cherries are allowed to oxidize for 72 hours. The coffee is then dried to a 15% water content, re hydrated

and then moved to mechanical drying in circular dryers at temperatures below 45°C until they achieve a moisture content of 16%
