The grapes are crushed and the must is extracted by running off or 'bleeding' the free-run juice after a short pre-fermentation maceration period of 8-10 hours

A proportion (10%) is fermented in aged oak barrels to add subtle character and layers to the wine

Gamay Noir vines range from 40 to 90 years of age

Each parcel went through malolactic fermentation and was aged on lees before being blended
