Westward Whiskey Stout FoodstuffsA celebration of Oregons legendary brewing culture, this whiskey honors our brewing roots and grew out of our longstanding cask trading tradition Northwest craft beer producers. For as long as weve been making whiskey, weve traded our freshly emptied barrels with some of our brewing collaborators. They have in turn seasoned them with Stout before returning them again. He vinifies with natural yeasts and ages the wines on lees with minimal SO2 in a mixture of barrels ranging from 300-600 litres

'Pale golden colour

with a stretch of fine tannin that runs through the wine and underscores the cherry and floral characters

this Eau de Vie is made from the single distillation in a column still of a peary made from 100% peary pears

enjoyed alone or as a mixer

The fruit is fully hand harvested and sorted before 100% de-stemming with maceration on skins for 10 hours at 3°C before pressing
