Beaufort d'Alpage MABeaufort is a raw cow's milk cheese from the Savoie region of France. Often called "the prince of Gruyeres," it is a classic mountain cheese. Its texture is dense and smooth, and its flavors are cooked cream, baked potato, hay, and red fruit. Beaufort is made throughout the year, but the best wheels are made using summer milk when the cows and the family are living in the high Alps.
